Dry ingredients assume the “spoon and level” method: spoon into the cup and scrape it flat. Scooping flour straight from the bag packs it and can add 20% or more — one reason bakers prefer weighing.

Why do different sites give different grams per cup?
It depends on how the cup is filled and on the product: flour ranges from about 115 to 140 g per cup. Weights here are typical values; if your recipe states a weight, use that.
Is a metric cup the same as a US cup?
No. A metric cup is 250 mL, about 6% more than a US cup. For recipes using metric cups, convert through milliliters.
